Savory Sweet Potato Mash, Gluten-free, Dairy-free

I’m not gonna lie, I don’t much care for sweet potatoes.
I know, I know, everyone has told me I should eat them because they are good for me, but my experience with them has been cloyingly sweet, or chili-pepper hot, deep-fried with heavy dipping sauces, neither are my favorite.
To be honest, once in awhile I’ll bake one and stuff it with chorizo, butter, cotija and cilantro, but with the dairy-intolerant in the crowd I have to save that option for days they are not visiting.

It was family dinner nite and I was racking my brain on what to do with my 6 Jersey Sweets on hand. (They are the ONLY ‘sweet’ potato I tolerate, primarily because they are not that sweet.)
As I rolled things around the savory/dairy-free conundrum in my head, it dawned on me: instead of butter (or fake butters) what if I used an infused oil instead?

Ah HA! (pat myself on the back!)

This is what I came up with: Herbs de Provence & garlic scented, sage infused olive oil (a good tasting one), along with bacon, chives and garnished with parsley. For those who feel the need to ‘brighten’ up the flavors you could add a squeeze of lime, but I LOVED the way they turned out. So did the rest of the family!

***Note: I do not recommend any other ‘sweet’ potato for this recipe. Jersey Sweets (they are light brown in color and can vary in shape and size) are ideal because of their lower sugar content and earthy flavor.

Savory Sweet Potato Mash, Gluten-free Dairy-free
(serves 6)

6 medium sized Jersey Sweet Potatoes (approx 6-8 inches long), peeled and cut into equal sized chunks
2 cloves Garlic, peeled & whole
1 generous palmful of Herbs de Provence
1/3 C Olive Oil, good tasting-like an EVOO (extra virgin olive oil)
Sage, leaves from 2 sprigs
2 Green Chives, white & light green part only
6 slices Bacon, cooked and crumbled, 1-2 slices reserved for garnish
Parsley, minced for garnish
Kosher Salt & Pepper

Peel and chunk the potatoes, adding them to a pot of cold water to cover by a couple of inches. Add the garlic cloves and Herbs de Provence, and a good generous palmful of kosher salt  then bring to a simmer. Cook potatoes until a fork can easily pierce them.

While the potatoes are cooking, in a small saute pan add the oil and sage leaves. Turn on low heat and allow to come to a simmer.  Simmer the leaves (it looks like they are frying) for a minute. You are aiming to get them to release their oils, not brown them, but they will change color and texture.
Turn off heat and let leaves continue to perfume the oil while the potatoes cook. Reserve a generous tablespoon or two of the oil for garnish.

When the potatoes are tender, drain.
Put hot potatoes (including the boiled garlic cloves) back into the pot on the – now turned off but still hot – burner to let the excess water in the potatoes steam off and dry out a bit.
Using a potato masher or a fork, mash the potatoes and garlic in the still hot pot. You really want to render some of that excess water out. You can turn the burner on very very low for a few minutes to assist, adding some of the sage infused olive oil to keep from sticking.
Add 3/4 of the olive oil to the potatoes, reserving some to spoon over the top at serving.
Mix in the chives, bacon and stir to combine.

Pile potatoes into a warmed bowl, garnish with bacon bits, parsley and drizzle the extra oil over the top.

I hope you enjoy this as much as my family did, its a real keeper! You could add a DF/Vegan cheese if you wanted, or change up the herb to infuse in the olive oil.
Personally, I think they were perfect the way they were, and paired extremely well with a roasted pork tenderloin but they will go well with roasted chicken or steak.
If you are vegan or vegetarian, this would work without the bacon.

Grandma Nettie’s Stuffing : Gluten Free Thanksgiving Dressing (2019 Updates)

This was the stuffing recipe handed down to me from my mother, who has since passed away. For many years, I stuffed the turkey with the very same version, only it was normal bread croutons, Pepperidge Farms Herbed Dressing to be exact.

With the discovery of my daughters gluten intolerance, I’ve had to come up with an alternative. Due to the nature of GF breads, it would turn to mush inside the bird, so, I have created a dressing version instead. (Dressing is what it is called when not baked inside the bird)

You can use Udi’s bread for this recipe, but I highly recommend ‘Goodbye Gluten’. It’s shelf stable and the texture is incredibly good, and the resulting dressing is light instead of dense. I use both whole grain and white for color and texture. This dish is such a favorite in our household, that I have actually taken it with me on the occasion we were invited to someone else’s house for Thanksgiving. I cannot imagine Thanksgiving without it! Here, we call it “Grandma Nettie’s Stuffing”. You’ll just call it DELISH! (Read the recipe all the way to the end before tackling. You can put questions in the comment section below!)

(2019 Updates: DF replacements are discussed at the bottom. You can still make your own croutons, which is nice to be able to adjust your own seasonings and control the sodium, but see below for my latest crouton substitution.

Grandma Netties Stuffing

3/4 loaf Goodbye Gluten white bread, cubed, 1/2 inch (crusts removed is optional. if you remove crusts, use the entire loaf, leaving out the loaf end pieces)

3/4 loaf Goodbye Gluten whole grain bread, cubed, 1/2 inch (ditto above comment)

(2019 Update: Sustitute 1-2 boxes of Trader Joes Gluten Free Dressing Cubes OR if making with glutenous bread, you can use 1 bag of packaged bread cubes)

2 cubes butter, 1 cube melted

(2019 Update: for DF, substitute Miyokos Vegan Butter)

1 tsp herbs de provence or an italian mix

1 med-large onion, chopped small dice

3-4 stalks celery, small dice

1 pound breakfast sausage (check for gluten if making GF)

1 can water chestnuts, diced (yes, water chestnuts. Trust me!)

1 tsp dried sage, or 1 tbsp chopped fresh (optional, we like ours with a good dose of sage)

1-3 cups warmed Homemade Turkey Stock (or good quality, low-sodium Chicken Stock, NOT BROTH) Homemade recipe can be found HERE.

Extra melted butter for basting, and extra stock for adding moisture if needed.
NOTE: This recipe is flexible and can easily be doubled.
Heat oven to 250 degrees. Lay the bread cubes out on sheet pans and gently brush with 1/3-1/2cup of the melted butter.

Season with salt. (I use my silpat for easy cleanup) Sprinkle with the Herbs de Provence

and bake until the cubes are dried out and crisp. Stir a couple of times, so that all sides are exposed to the heat. This may take between 20-40 minutes, depending upon the moistness of your bread. (I have done this up to a week in advance, freezing them in a ziploc freezer bag and defrosting on a sheet pan when needed.) Let cool.

Cook sausage in a large skillet, till no longer pink. Remove from pan, wipe skillet with a paper towel and add butter to melt. Add onions and celery and cook on medium heat until tender, but still a bit crisp. Add back the sausage and the diced water chestnuts. (This step can also be done up to 3-4 days in advance, refrigerating and rewarming to melt the butter prior to assembly)

When ready to bake, toss the warm sausage mixture with the bread cubes and sage, gently, until evenly combined. Add the turkey stock until the mixture looks moist, but not wet. This is going to take some eyeballing, just remember, you can always add more stock for moisture. You most definitely do not want a soggy mess, err on the side of caution. Start with 1 cup of stock, adding 1/2 cup increments until it absorbs some of the liquid, but are still fully intact.
Pour this mixture into your casserole dish or desired baking pan and bake at 350 degrees for 30-40 minutes. The first photo is a 9×13 pyrex dish, but I doubled the recipe for this. Baste frequently with additional melted butter, and stock if needed. Your goal here is for the top to become buttery/crunchy/golden and the underneath to be moist, tender and yet still fluffy. You can check the progress with a fork, gently lifting the top layer to get a gauge on how the bottom layer is doing. When the underneath steams and the top is browned, it’s done.
If you are looking for a traditional tasting stuffing that is sure to please even the pickiest of eaters, you can’t go wrong with this one. If you try it this year, or at any time, let me know what you think!
POSTNOTES:
– I wrote this recipe in this format, so that it feels like I am in the kitchen with you, walking you through the steps.
– It sounds vastly more complicated than it actually is.
– This recipe is also very flexible: If you hate sage, omit sage. If you want to trim some of the fat, cut the butter by half and drain the sausage. We don’t, because I eat this once a year and we like it just exactly this way, plus I limit how much I take. Portion control!
– You can increase the ingredients to suit your taste. I believe in the photo, I used a pound and a half of sausage. What can I say? Pork and pork fat rules.
– You can make this dressing with regular old bread cubes from the bag (which I did for decades) using the liquid portions listed on the package.
– For leftovers we always, and I mean ALWAYS have a turkey sandwich on white ‘bread’ with thick slices of turkey, mayo, cranberry sauce and stuffing. It honestly makes for the BEST sandwich ever, and as I said above, it’s a sandwich I eat once a year, so I allow myself the indulgence.
– I apologize for the anemically yellow photo of the finished dish. One of my goals this Thanksgiving is to pick my brothers brain on ways to achieve better pictures. He is a photographer, and obviously I am not. My trusty iPhone has served me well on my Facebook cooking page, but it’s time to step up my game!
*Update: After putting my own bread in this morning, I am re-adjusting the temp to 250 and will recommend you check every 10 minutes for up to 40 minutes. Mine took 40 minutes, which hubby dutifully tended while I hit the grocery stores. DAB the bread cubes with butter, you’re not soaking here. Just adding a layer of flavor and encouraging normally difficult GF bread to dry out crispy, intact and give something for the herbs to stick to. I am including photos I took as I prepared the croutons and the mix. Hopefully tomorrow I can post a better picture than the one above! Check recipe again for any additional tips, tricks and modifications.*

2019 Update:
So many advancements in GF nowadays. I wrote this years ago when GF was in its infancy.
Now I go to Trader Joes and buy their GF dressing croutons and add a little more stock to moisten.
Also, when I first posted this we thought my daughter lactose intolerant, which meant I could do butter. In the years between we discovered she cannot tolerate the A1 protein in milk. Praise the Lord for A2 milk, and the improvement of vegan butters.
I substitute Miyokos Vegan European Cultured ‘Butter’ for real butter. It’s delicious.

Got Turkey? Brine it!

This next spring will be the big 2-5 celebrating hubby’s and my wedded bliss, which means I have been making Thanksgiving for going on 25 years, give or take a year or two away from home. That means, I have tried many brands of turkey and tried many variations of preparation. After some ok, mediocre, or pretty good variations, I have settled on the trick of brining my bird every year, which results in a perfectly seasoned, very tender, juicy and flavorful turkey. I also think I’ve perfected the cooking method, but we’ll leave that for another day.

First of all, do not use a pre-seasoned turkey like Butterball or Jennie-O. Those have already been injected with a solution to yield moist & seasoned turkeys. I have done the injection method from scratch, but I find it hit or miss.
I prefer not to ingest some of the additives, and I also like to control what goes in to my food. Brining allows me that control.

For this recipe, I use an all-natural, hormone-free, free range organic turkey, but just natural is perfectly fine. I like to try and support local farmers, so I find stores that carry fresh turkeys grown locally. Most people steer away from natural, free-range turkeys because they can be dry and tough. This method will ensure a tender, moist bird you can be proud to put on the table. An added benefit is the highly seasoned, flavorFULL gravy that results.
(Note: Do not add salt to your gravy until you have tasted it. The drippings will be naturally salty from the brine, so be sure to taste test and season the gravy. I have never had to add salt to my gravy since I started brining.)

Let’s begin.

First of all, pull together your brining solution. I saw this trick on an episode of Alton Browns “Good Eats” and it honestly is the best Thanksgiving tip ever. Use a construction cooler. You know, the orange kind you can buy at the hardware store? I bought mine a few years back and use it every year, sanitizing it after each use. (bleach, soap and hot water) I just mix the brine up directly in the bottom of the cooler and plop the turkey in:

That is one happy turkey!
Then follow that with a 7 pound bag of ice. I use bagged ice because it’s easier and I know that the ice is pure and clean tasting, not having any off odors or tastes that love to settle in home ice makers.

Finally, put the lid on tight, and stuff in an out of the way corner. I do this the day before Thanksgiving, usually late afternoon, early evening. The next morning, I pull the turkey out, rinse it off, pat it dry and let it stand covered for an hour before rubbing with herbed butter and baking. You can also use the handy-dandy pour spout and drain the water out directly into your sink! Your bird will sit in the brine for 8-12 hours, so back into your cooking time, allowing for some time for the bird to dry and come to room temp. The largest bird I’ve done this way was 20 pounds. Anything bigger and it won’t fit in the cooler.

Seriously, how easy is that? This method frees up your refrigerator, which is usually full to the brim anyway, and yields a truly yummy turkey and incredible drippings. Give it a try, and tell me how it went!

Honey Turkey Brine

1 gallon Very Hot Water
1 pound Kosher Salt
2 quarts Vegetable Broth
1 pound Honey
1 7-lb bag of ice
1/2 package Fresh Sage, roughly torn (you can use 1 tbsp of dried added to the hot water)
1/2 bunch of Fresh Parsley, roughly torn (do not use dried)
2-3 tbsp Herbs de Provence, added to the hot water to release the flavors.

Combine the hot water (and if using – dried herbs) and salt in the construction cooler. Stir until the salt dissolves. Pour in the vegetable broth and honey. Add half the ice and give a stir.

ALLOW TO COOL!

Place turkey, breast up – feet up – in the cooler. I submerge the bird as best as possible to get the brine in the cavity. Dump the last of the ice over the top. cover and let brine for 8-12 hours.

*Note: You can use a vegetable boullion also like Better than Boullion. The additional salt will not be a problem.
